Making your own nut butter allows you to avoid all of the sugars and hydrogenated oils (eek!) that fill your popular store bought brands (think Jif, Skippy, etc.).
Side note: I hear that if you have the coveted Vitamix it can make nut butter lightning fast. I can't convince my husband that the sticker price is worth it so I don't know if this is true or not. I'll count on all of you Vitamix-owning guys and girls to set me straight.
The first time I tried making my own almond butter I stopped the process too early. It had been 20 minutes and my butter wasn't anywhere near smooth and creamy. I figured it had to be done since the timer was up. I thought my food processor simply couldn't handle the job or that I had messed up somewhere along the way. Wrong! I just wasn't patient enough. It will eventually get there so just let it keep churning!
Now that I've stared at all of these pictures of creamy almond butter goodness I think its time I go make myself an afternoon snack using it! Happy eating!
